This Juicy Mojito Riff Is for Watermelon Lovers
There are many ways to make a watermelon mojito. Whether you get that vibrant watermelon flavor from juice, syrup or fresh muddled fruit, it pairs beautifully with aromatic mint and rum. In Puerto Rico, one of the world’s great rum capitals, bartenders like to put their own spins on the watermelon mojito—and you’ll find plenty of these riffs along the beachside haunts of San Juan.
At La Concha Resort, bartender Manuel Porro makes his own tangy watermelon shrub with white vinegar, sugar and watermelon, which he then muddles in with the lime and mint to form the base of his mojito. At Condado Vanderbilt Hotel, Jerik Diaz makes his watermelon mojito with two kinds of rum: Don Q Cristal and Don Q Limón, to play up the drink’s acidity.
But it’s the watermelon mojito from Sebastian Toro, bartender at Condado Ocean Club, that is the ultimate beachside refresher, thanks to the addition of juicy muddled cucumber. Take a look at the recipe below.

Watermelon Mojito

Ingredients
2 ounces watermelon juice
2 ounces white rum
¾ ounces simple syrup
¾ ounces lime juice
3 lime wedge
5 to 6 mint leaves
1 slice of cucumber
Soda water, to taste
Directions
Step 1
Add limes, mint and cucumber to a Collins glass and muddle lightly.
Step 2

Add ice, lime juice, watermelon juice, rum and simple syrup and mix. Top with soda.
Step 3

Garnish with mint sprig and watermelon slice.
