Champagne cocktails have become synonymous with brunch. It’s for good reason: These simple yet refreshing drinks lend themselves beautifully to a whole host of food pairings, from Dutch baby pancakes to cheesy egg scrambles. But don’t limit these effervescent cocktails to brunch spreads or special occasions. We think that just about any time of day calls for a bubbly drink. To help you get mixing, we pulled together (some of) our favorite fizzy cocktails that call on sparkling wine.
A handful of recipes on this list call for Prosecco, Cava, or other bubblies. However, you can substitute Champagne in for any of these. While a swap might change the flavor profile of the original cocktail slightly, we think you’ll still love the result. Best of all, these drinks are a great way to utilize leftover Champagne—even if that’s a scarce occurrence.

The Mimosa
First on this list? The mimosa, of course. With just two ingredients, this effervescent cocktail has been enjoyed for around 100 years and its popularity shows no signs of waning. Pro tip: If you are using higher-end Champagne, keep the orange juice to about two ounces to retain the wine’s original flavor.

The Kir Royale
The bubbly, elegant Kir Royale is a variation on the classic Kir, which is made with dry white wine instead of Champagne. The effervescent, sweet, and slightly herbal drink is delicious, yes, but the key to its longevity and current vogue is its versatility. It doesn’t hurt that it’s just two ingredients, either.

The Stardust Royale
From Casablanca to Citizen Kane, this iconic filmmaking era (1930s to 1940s) introduced some of cinema’s best-loved flicks, most in black and white. It’s easy to imagine characters from these years sipping this sophisticated Stardust Royale, an effervescent drink featuring Cognac, mint, and, bien sûr, Champagne.

The Dirty Spritz
Striking a perfect balance of sweet and savory, the Dirty Spritz is the newest cocktail to arise from the TikTok canon. It combines complex Cardamaro (a vino-amaro), fino sherry, Castelvetrano olive brine, Champagne, and club soda, complete with a garnish of olives, an orange twist, and a spritz of extra-virgin olive oil.

The Porn Star Martini
Invented in 2002, the Porn Star Martini‘s name has been responsible for countless giggles in bars across the country for over two decades. Not resembling a martini at all, this cocktail calls for a hearty topping of bubbles.

The No Learning, No Hugging
If you’re a Champagne fan who loves Seinfeld, you need this drink as its name references the writer’s room mantra of the ’90s sitcom. But unlike the no-frills approach to the show, No Learning, No Hugging incorporates a number of ingredients and flavors.

The Sidecar Royale
Top Cognac, Cointreau, lemon juice, and a few other ingredients with Champagne for a twist on the classic Sidecar cocktail.
