This Pine-Infused Spritz Tastes Like a Christmas Tree
Over recent years, the spritz has become one of the go-to cocktails of summer. Most often made with a mix of amaro, sparkling wine, and a splash of soda, these low-abv sippers are light and refreshing, ideal for sipping outdoors under the sun.
But, despite the dwindling daylight hours and intense desire to hibernate on the couch, we’re not ready to say goodbye to our favorite bubbly drinks. It just so happens that Pine Barren Spritz from La Dolce Vita Beverly Hills perfectly encapsulates the flavors—and vibe—of the holiday season.
The cocktail gets its signature piney flavor from Zirbenz, an Austrian liqueur made from “fresh young arolla stone pine cones picked during a brief seasonal window at high altitude,” says Blake Antrobus, La Dolce Vita’s bar lead.

While the Zirbenz brand used in this recipe is a widely available commercial product from a long-standing local distillery, families and farmers throughout the Austrian Alps have a long tradition of making their own Zirbenschnaps or Zirbenlikör, Antrobus says: “It is very popular as an après-ski drink or as a digestif consumed in mountain huts (Almhütten) and at traditional gatherings, especially around the Christmas holidays.”
